Every so often we come across a cask that reveals such intriguing complexity or distinctive character, that our Master Whisky Maker, Gordon Motion, sets it to one side. Sharing these extraordinary casks that bear all the hallmarks of Highland Park yet reveal their own unique personality is the inspiration behind our new Discovery Selection.
 
Release No. 1 comes from Cask 2863, a first-fill, sherry seasoned, American oak butt laid down in 1998 and left to mature for 20 years in Warehouse 12 at Highland Park Kirkwall distillery. Bottled in 2019 at 57.9% ABV, it’s a warm and spicy single malt revealing notes of sweet pastry, a dusting of aromatic spices and tangy lemon zest, wrapped in a cloud of gentle peat smoke.
